Easy Oven Baked Whole Wheat Pancakes

If you want the whole family to sit down to breakfast at the same time, these Easy Oven Baked Whole Wheat Pancakes are for you. Start the day right with breakfast with those you love!

We often have pancakes for breakfast because they are a favorite of my husband's. But even with just the two of us, I was at the stove while he ate breakfast...not horrible, but definitely not a shared meal.

Then one day while we were volunteering as National Park Service support staff, I got the idea to pour the batter into a small pan and give it a quick bake in the oven. As it turned out, it was just the technique we were looking for! We each got to enjoy fresh hot pancakes, together

I love the One Cup Pancake recipe from Jaime Oliver. It is simple enough for younger cook-savvy kids to make their own breakfast, and it adapted perfectly to my recipe for Whole Wheat Self Rising Flour. I like my pancakes with vanilla yogurt and applesauce. My husband has more of a sweet tooth and prefers real maple syrup and walnuts. What is your favorite topping for pancakes?

Ingredients needed for this recipe:

  • whole wheat self-rising flour, recipe found here
  • milk
  • egg
  • vanilla if desired
You will also need the following:
  • medium-sized mixing bowl
  • measuring cups
  • stirring spoon
  • 7X11 baking pan
Now we are ready to begin!

Place flour into a medium-sized bowl, make a "well" in the center of the flour, drop in the egg. Pour the milk around the rim of the bowl over the flour. Beat egg lightly, then combine all ingredients until smooth. Note: The mixture does not to be lump-free.

Pour into prepared pan, bake 20-25 minutes, or until done in your oven.

Remove from oven, fry up some eggs if you want, and everyone eats at the same time!

PS, to adapt this recipe for larger families. Double the ingredients and bake in a 11X15 pan, to yield 12 pancakes.
