Tonight we enjoyed a delicious Avocado Caprese Salad. This is a bit off the path from the usual Caprese salad, but very much a delightful rendition. And because it is a freestyle salad, feel free to improvise as you wish, to please your family. This Avocado Caprese Salad makes a lovely starter to any summer meal, as well as a delicious main course. For this presentation, we just happened to have purple basil, but Avocado Caprese Salad is just as delicious when using green basil.
- avocado
- tomatoes
- fresh mozzarella cheese
- salt
- pepper
- fresh basil leaves, purple basil is particularly beautiful!
- Balsamic Vinegar
- cutting board
- kitchen knife
- serving platter
Avocado Caprese Salad
by the seat of my pants
1 large avocado
2 plum tomatoes,
8 oz fresh mozzarella cheese
fresh basil leaves, green or purple
salt and pepper
1-2 T balsamic vinegar
Cut the avocado in half, remove the pit. Slice each half into 4 slices, and peel. Arrange the 8 slices of avocado on a large dinner plate or a platter.
Slice the mozzarella into 8 slices. Place near or under each slice of avocado.
Slice both tomatoes into four slices. Place a tomato slice near or under the avocado and/or mozzarella cheese. Dice any leftover tomato and scatter over the top of the platter if desired.
Season lightly with salt and pepper. Note: while mozzarella is salty, you will want to season the tomato and avocado slices.
Drizzle with 1-2 T balsamic vinegar, evenly over the platter.
Arrange 8 whole leaves of basil in the center with each slice of avocado. Hand tear the remaining basil and sprinkle evenly over the salad.
At the table, pass additional balsamic vinegar to dress each salad serving individually.
