Slow Cooker Apple Crisp, with a surprising ingredient!

Slow Cooker Apple Crisp! Not the most exciting name for a dessert, is it? But this is one recipe you will want to try! Why? Because not only is this Slow Cooker Apple Crisp delicious, it has a surprising ingredient that really makes the flavor!

Sometimes following a recipe is a leap of faith...

When I made Slow Cooker Apple Crisp for the first time, I almost left out the "surprising ingredient", that I have mentioned. But I am very glad I made the recipe as written because without a doubt it makes the flavor! The topping on this dessert is nutty, crumbly, and just right, over the top of all those tender lightly sweetened apple slices bathed in a touch of cinnamon. But it really isn't surprising when you think about peanut butter on apples slices being such a popular snack.

Peanut butter in the apple crisp? Yes!

Thinking back I have no idea why I even thought for a brief moment to leave it out. Because we (like everyone else) have been eating peanut butter on apple slices for years! And while I would have never thought to put peanut butter in the crumble topping, I am glad that I did.  And so will you!

Can you taste the peanut butter?

Yes and no! While it does not taste like peanut butter, it does taste nutty, buttery and delicious! All of the ingredients come together to create one of the best crumble toppings on a fruit crisp you will ever enjoy! Slow Cooker Apple Crisp is a delicious fruit dessert the whole family will love. And being a slow cooker recipe, that makes it so easy and the perfect dessert to enjoy, even on those busy days...

Serving suggestions.

Slow Cooker Apple Crisp is delicious plain, but honestly, whenever I can get away with a touch of whipped cream, I take advantage! But you know, if you have a carton of French Vanilla Ice Cream available in your freezer, don't be afraid to add a little scoop! For some reason, warm apple crisp seems to call out for a touch of cream on top. And should your apple crisp get cold, I am sure you have a microwave handy...

Some thoughts on this recipe:

The crumbly topping is easiest when made in a food processor, but you may also use a pastry blender or even your hands. If using old-fashioned oats, you may wish to pulse them a few times before adding the remaining ingredients.

You may want to taste one or two of the apple slices, then use the amount of sugar you want, for a tasty dessert. Keep in mind, that the topping is where most of the sugar is found.

Use any apples you have, except for Red Delicious apples which are better for fresh eating, any apple in your pantry will make a delicious dessert.

While I often leave the peel on apples for many recipes, I prefer peeled apples in this dessert. Feel free to leave the peel on, if desired.

6-8 apples depending on size
1/3 - 1/2 c sugar - depending on the sweetness of your apples
1 T cornstarch
1/2 t cinnamon
1 T apple cider vinegar
2 T water

Wash, dry, and peel the apples. Cut in quarters, remove the core sections, then slice thinly.

In a large mixing bowl, combine the apple slices, cornstarch, cinnamon, apple cider vinegar, and water.

Stir well to mix all together, then turn into a prepared 6-qt slow cooker.

Set the temperature on high.

1 c old fashion or quick oats, see note below.
1 c whole wheat flour
1/2 c sugar
1/4 c brown sugar
1 t cinnamon
1/4 t nutmeg
1/2 c butter
2 T peanut butter OR almond butter

Add all ingredients to the work bowl of a food processor. Pulse to combine the ingredients, then process until completely mixed together and begins to "clump" slightly.

Spoon evenly over the top of the apples.

Cover and cook on high for two hours.

Remove cover and cook one additional hour to crisp the topping.

Remove the cooking crock from the base, let dessert cool slightly before serving.

Note: if using old-fashioned oats, you may wish to pulse the oats a few times before adding the remaining ingredients, this will ensure a consistent texture in the topping.

Storage options for Slow Cooker Apple Crisp. Store covered at room temperature for up to two days. For longer storage, you may store it in the refrigerator for up to five days. Freeze for longer storage if needed, but expect a change in the topping texture. Thaw in the refrigerator before serving.
