Nuts and Honey Granola!

Nuts and Honey Granola is made with four different nuts, almonds, walnuts, cashews, and coconut! Baked to a golden brown, this is one delicious granola...plus granola for breakfast is so easy for the young ones to help themselves.


How is granola involved, again?

We have a new adventure in mind, and in order to make this dream come true, we have put our current home up for sale. We quickly received an offer to purchase, and we are now waiting to close. Keep your fingers crossed for us, won't you? I am guessing right about now you are wondering how selling a house has anything to do with making granola...well, let me explain.


Because there was nothing but empty granola cannisters!

You see, all my granola jars in the kitchen were empty! And knowing that we will be taking to the road for some traveling to make the next dream come about, means good food is needed in our little RV. And with the upcoming move coming about real soon, now is not the time to stock up on a lot of groceries. Actually, just the opposite is true, we are eating down the freezers as well as the pantry for our meals as well as shared meals with the family. It has been a challenge as well as fun to use what we already have while making delicious yet creative meals.


Turns out I love this new flavor as much as all the others!

To stock my granola supply, I had wanted to make my usual go-to favorites, Honey Almond Granola and Maple Pecan Granola. While I did get the Honey Almond Granola completed, there were not the needed supplies for the Maple Pecan Granola. Apparently I/we had been doing a really good job of using what we had!  


Enter my usual fallback. The first thing I did was take stock of the supplies I did have in the pantry. Then, thought about which combination of ingredients would make a new flavor of granola that I would enjoy and want to make again.  And that is how Nuts and Honey Granola came to be...come and take a look. I think you are going to like this basic yet nutty delicious granola.


Ingredients needed for this recipe:
  • oats
  • coconut oil 
  • honey
  • molasses
  • vanilla
  • salt
  • almonds
  • walnuts
  • coconut
  • cashews
You will also need the following:
  • large-sized mixing bowl
  • measuring spoons
  • measuring cups
  • glass measuring cup
  • kitchen spoon
  • silicone spatula
  • cutting board
  • kitchen knife
  • large flat baking pan
  • storage container
Now we are ready to begin!



Nuts and Honey Granola
by the seat of my pants!
350-degree oven

5 c old fashioned oats
1/2 c coconut oil
1 T molasses
1/4 t salt
2 t vanilla
1 c honey
3/4 c walnut pieces
3/4 c large coconut shreds
3/4 c raw cashews
3/4 c chopped almonds

Place the almonds on the cutting board, chop coarsely, and set aside. 

Measure the oats out into the large mixing bowl. Add the chopped almonds, coconut, walnut pieces, and cashews. Sprinkle with the salt. 



Measure and melt the 1/2 c coconut oil. Pour over the oat mixture. Next add the honey, molasses, and vanilla. 

Mix everything together well making sure that the oil and the honey are mixed with all the other ingredients. 



Place the mixture into a prepared baking pan. Spread evenly across the bottom of the pan. 

Bake 15 minutes. Stir well bringing the outside edges to the center. 

Bake 10 minutes, and stir once again. 

Bake for a final 5 minutes or until golden brown to your liking. Take care and do not over bake the granola. Remove from the oven, and stir gently. 



Important: stir again in 5-6 minutes, 10-12 minutes, and the last time at 15-18 minutes. This keeps the pan of granola from becoming a giant granola bar!

Let cool completely, then store in a covered container at room temperature. 

Storage options for Nuts and Honey Granola. Store covered at room temperature until completely eaten! This granola does not get soft or stale.

    1. Most of my recipes use natural sweeteners, refined sugar and I don't get along very well. Granola stays with me for most of the morning, and when I do get hungry before lunch due to the natural sugar used I don't go from OK to famished instantly.
