Our favorite Non-lettuce Salads to Serve and Enjoy!

Salads! Everyone eats them. But maybe, just maybe you could get more fruits and vegetables in your meal plans by serving them more often. And we're not just talking about tossed greens here! 


We are talking about delicious non-lettuce salads the whole family will love. And double bonus, you will automatically be getting more of all the good stuff you want your family to eat (vegetables!), on the table, for your family to enjoy...

As life gets busier a non-lettuce salad is a perfect way to get more vegetables and whole grains on the table and into the meals that your family enjoys. As we continue to develop new recipes here at Scratch Made Food! & DIY Homemade Household and try recipes from other great cooks, we will update this list for you to enjoy...because eating more vegetables seems to be our mission!



French Lentil Salad, one of many that your family can and will enjoy all year long! Another delicious salad calling for basic pantry ingredients and featuring lentils, making is high in protein, fiber and delicious taste!



Fresh Beet Salad with Ruby Grapefruit Vinaigrette Avocado and Feta will change your mind about beets. When fresh from the garden they have a natural sweetness that highlights the salad in a delicious way! You just might be surprised at how enjoyable raw beets are...



Family Favorite Macaroni Salad hit the spot every time! Perfect for adding to a meal to round it out, or taking to a potluck BBQ!



Beet and Apple Salad with Feta and Walnuts, hits the spot! We loved this salad and will be making it on repeat for just about any and all shared dinners to spread the joy of eating beets, because they really are that delicious!



Simple Carrot Salad can be made in a minute! It can also be made with the most basic of pantry ingredients! One of the easiest ways to add fiber and good taste to your meal, perfect for lunch or dinner. 



Red Cabbage Slaw is delicious as is, but perfect to dress up with different dried fruit or nuts each time you serve it for something just a little bit different. And this slaw is well worth the effort, because red cabbage is a powerhouse of nutrition. 



Grape and Banana Medley, is a delicious blend of grapes and banana slices in a sour cream dressing. A vintage recipe that never gets old!



Quinia Tabbouleh is the perfect recipe to introduce the family to the delicious pleasures of quinoa. I say that because I was late (very late) to the quinoa party and I am still learning about this nutritious grain.  



Red Beet Salad with Cranberry Vinaigrette. Raw beets are quite delicious, and this salad with fresh apple and dried cranberries is wonderful The salty Feta pairs nicely against the vinaigrette. 



Blistered Green Bean Salad with Smoked Paprika Vinaigrette, Feta and Chopped Almonds. This salad is the second green bean salad recipe to be offered, and it is just as delicious as the first, but with a completely different personality! This one is bold with a smoky paprika vinaigrette. 



Celery Root Carrot and Apple Slaw.  Coleslaw doesn't get much better than this unique and delicious celery root slaw. Lightly sweet, mildly crunchy this just might be your new family favorite!



Tuscan Bean Salad with Tomatoes and Oregano.  Garbanzo beans, tomatoes, baby greens, and a bit of cheese! This delicious salad is perfect as a side salad for four or a main dish salad for two. It is made with easy to obtain ingredients, many of which you will already have on hand when you cook with what you have!



Sour Cream Beet Salad makes the fifth beet salad added to this growing list. And for good reason, beets are not only delicious, they are also good for us! We enjoy beet salads two ways, made with cooked beets and raw. My goal is to offer enough salads that you will find one, that you enjoy! This beet salad is simple and delicious, my favorite kind of recipe.



Mark Bittman's Black Bean and Mango Salad. This unique combination is so good, and you would expect nothing less from Mr. Bittman! Keep some black beans in the pantry, pick up a mango and a fresh bunch of cilantro and you will soon be enjoying one delicious non-lettuce salad.



A salad doesn't get any easier than this Avocado Caprese Salad. It is beautiful and delicious and everyone will love it!



Kale Apple and Carrot Slaw. The perfect way to get those kale haters to eat some kale! This is one all slaw lovers will enjoy. 



Fresh Pear with Gorgonzola Balsamic Vinegar and Toasted Walnuts. It probably takes longer to say the name of this starter salad, than to prepare it...



Winter Pea Salad Plate with Tomatoes and Cashews. Don't let the name fool you, this is perfect year-round. However, it is especially delicious in the dead of winter. 



Cottage Apple Salad. Simple and delicious. The perfect solution for those that enjoy the fresh flavor without added sugar. 



Broccoli Salad with a Curry Dressing. Especially handy to make ahead on those really busy days!



Simple 3 Ingredient Beet Salad. A fresh way to enjoy those beets from the garden. 



Crunchy Tangy Jicama Waldorf Salad. Crunchy, not too sweet, and the perfect way to serve a little jicama!



Moroccan Carrot Salad. Not your same ole carrot and raisin salad! Rich with flavor but no heat. 



Root and Stem Salad. A delightful celery and celeriac salad with a creamy lemon dressing. Bold and delicious!



Shaved Brussels Sprouts and Apple Salad with Pecans. Raw Brussels Sprouts are delicious, and they really shine in this take on coleslaw!



Mary's Potato Salad. The potato salad of my childhood, my mom's recipe. Never written down (until now) but I must have watched her make it a hundred times through the years! And I think she would approve of the changes I made using the Instant Pot...



Black-Eyed Pea and Tomato Salad. This one is so simple to toss together that it can be made with your favorite kitchen helper! Plus a helper in the kitchen is a sure way to have them want to eat something new on the table...



Watermelon with Mint and Feta. This salad is the favorite of all who love salty/sweet combinations of flavors! It is one of the most refreshing salads I have ever eaten. The preparation is simple, and this is the perfect recipe to make with young cooks in the kitchen...



Fresh Green Bean Salad with Tomatoes, Feta, and Toasted Walnuts. This is nothing like the 3 Bean Salad popular years ago. This is crunchy and delicious and your family will ask for it again and again!

  5. This is a nice list of ideas. Summer is a great time for salads. I actually like a lettuce salad. 😊
    I will have to confess that the salad from your list that drew me in the most is the old faithful potato salad. Hard to beat!

I like a good (lettuce) salad once in a while, but I find lettuce quite boring, so I'm always on the lookout for salads and vegetable dishes that are different from the old-fashioned lettuce salad.
