Some time ago (years actually), I was given a gift card to a major department store.
And for me there is only one department in any large well stocked store that I always gravitate to, whether I have money to spend or not! Yep, the home goods department! While I stood in the middle of all the stuff to choose from, I realized that this might actually be the time to get things I wanted in lieu of things I needed. But it also needs to be said that any cook who cooks as much as I do, already had everything that is needed.
I have to tell you, I love this little crank handled cutter for so many vegetables that can be turned into a lovely salad. Yes the same vegetables can be grated and the salad will be just as delicious, but not quite as pretty. We are big on non-lettuce salads around here as well as composing a salad with what you have on hand. Because our goal always, is to eat more vegetables! And why not make them pretty along the way?
That day I spent the whole card on toys for the kitchen!
It was a lot of fun actually to purchase nothing but toys for the kitchen. I have a habit of calling any kitchen tool not necessary for cooking, a toy. Because the one thing I like to do in the kitchen is have fun, and fun usually includes a few toys. As I looked around the many shelves of equipment I realized that I already had just about everything in the department, from years of collecting and using my kitchen for cooking our meals and recipe development. It was at that moment that a spiralizer went into my my shopping cart.....

What was the first thing I made with the new toy?
This beautiful Fresh Beet Salad with Ruby Grapefruit Vinaigrette Avocado and Feta was the result of playing with my new toy! And only now do I wish I had taken more photos of the process along the way, because it was so delicious. So much so, that I am going to share it today. Fortunately it is also so simple to make, a lot of photos are not needed! I hope you give fresh beet salads a try, the earthy flavor is delicious and not at all overpowering.
Ingredients needed for this recipe:
- golden beets
- avocado
- Feta Cheese
- ruby red grapefruit
- avocado oil
- white wine vinegar
- Dijon mustard
- sugar
- salt
- fresh ground pepper
- mint leaves
You will also need the following:
- spiralizer or box grater
- measuring spoons
- cutting board
- kitchen knife
- medium sized mixing bowl
serving bowl
Now we are ready to begin!

Fresh Beet Salad with Ruby Grapefruit Vinaigrette Avocado and Feta.
by the seat of my pants
3 golden beets, peeled, then spiralized or shredded
1 avocado, cut into 1-inch chunks
1/2 c feta cheese chunks
1/2 ruby red grapefruit
1/4 c avocado oil - or other mild-flavored oil of choice
1 T and 1 t white wine vinegar
2 t Dijon mustard
2 t sugar
1/8 t salt
fresh ground pepper
4 mint leaves, chopped fine
Cut the grapefruit in half, juice one of the grapefruit halves. Save the other half for another use.
In the medium sized mixing bowl combine the grapefruit juice with remaining vinaigrette ingredients (avocado oil through chopped mint). Set aside.
Wash and dry the beets, peel then cut with the spiralizer or shred using the box grater. Toss the prepared beets with the vinaigrette. Let the flavors marry for about 30 minutes at room temperature.
When ready to serve, arrange the dressed beets on a flat serving bowl, and top with the avocado pieces and feta cheese. Drizzle any remaining vinaigrette left in the mixing bowl over the arranged salad. Serve immediately.
Storage options for Fresh Beet Salad with Ruby Grapefruit Vinaigrette Avocado and Feta. Store covered in the refrigerator for up to three days. You may notice some slight changes in texture in the beets and color in the avocado but the flavor will still be quite delicious.

Marg, here in the states, beets are on a bit of a up rise in popularity. You don't find each variety in large quantities, but they can be found in our farmer's markets in the different communities. It has been fun cooking with the different kinds. Thanks for stopping by, I appreciate it.
