Tomato Serendipity!

I must say, we are a condiment family. We love them! Plus with a few condiments in the house creative cooking just gets easier! It would be safe to say that one shelf in our fridge is completely devoted to the storing of condiments. So it is a really good thing this new one is stored at room temperature! Come and take a look at Tomato Serendipity, a delicious two ingredient shelf stable condiment to enjoy. 


You can't go wrong with condiments ready to go!

Our philosophy is that you can never go wrong with a few ready-made condiments in your pantry or cold storage. Like a jar of this feisty cheesy tomato-y goodness, I like to call Tomato Serendipity. 

What you might be asking is, what exactly is Tomato Serendipity

Well for starters it is delicious, but like most recipes found here, there is more to it. Used much like salt and pepper, only just a little bit richer. It is Parmesan Cheese and dried tomatoes, buzzed up into a tasty blended mix of goodness to enjoy. The bonus is that this two-ingredient recipe is also incredibly easy to make.  


How can I use this condiment?

Tomato Serendipity can be enjoyed sprinkled everywhere the taste of cheese and/or tomato is appreciated. Such as...
  • Sprinkled over a bowl of steaming soup.  
  • Added to a knob of butter, then spread on thick slices of bread and put under the broiler to melt and turn golden brown. 
  • Tossed with hot pasta and olive oil. 
  • Sprinkled on your favorite cooked beans. 
  • And don't forget green beans, zucchini, even boiled potatoes. 
I think you are going to want to give this a try...it is so simple to make, that all you have to do is , toss into the processor, buzz it up, and put into a jar with a shaker lid. 


Some additional thoughts on this recipe:

If you are not able to find julienne cut dried tomatoes, simply use kitchen scissors and make your own. 

And yes, the finely grated Parmesan cheese in the green can or with the green shaker lid is perfect for this recipe.

Do not use oil-packed tomatoes for this recipe.


Ingredients needed for this recipe:
  • dried tomatoes
  • Parmesan Cheese
You will also need the following:
  • food processor
  • narrow-mouth pint storage jar 
  • measuring cups
  • kitchen scissors
  • leftover lid from the Parmesan cheese container
Now we are ready to begin!

1 c lightly packed dried tomato pieces 
3/4 c dried Parmesan cheese or a Parmesan/Romano blend 

If using whole dried tomatoes, cut the dried tomatoes into julienne pieces, add them to the bottom of the food processor jar. 

Add the Parmesan cheese. 
 
Simply "buzz" in your food processor until the tomato pieces and the Parmesan cheese are approximately the same size. 

Tomato Serendipity! A delicious homemade tomato and cheese condiment.

Empty into the storage jar, attach the lid. 

For guests put in a serving dish, and add a spoon to sprinkle on with a heavy hand! 


Storage options for Tomato Serendipity. Store in a cool dry cupboard for up to six months. If desired you may also store in the refrigerator.

  1. When I was canning I dried my tomato skins and then ground them into powder to sprinkle into soups, sauces and whatever. - Margy
