One Pan Pork Chops and Scalloped Potatoes

One Pan Pork Chops and Scalloped Potatoes, just like Mom made.....food doesn't get much better than this! Food made with love served with love and loved by all who enjoy time around your table. That's a pan of One Pan Pork Chops and Scalloped Potatoes!


I remember this dish being made, standing by the table as a child watching mom slice the potatoes and onions. 

One Pan Pork Chops and Scalloped Potatoes, because there are some dishes from your childhood that will never leave your memory. This is one of those. And this big pan of pork and potatoes will remain on your request list. Tried and true, real home cooking. This is just like mom made, because this is exactly how my own Mother made this dish. This old fashioned comfort food is always a hit, and if there are leftovers, rest assured they are delicious the next day as well. 

I am sure I watched my Mom make this many, many times. It was a super easy supper, and one she could fix and forget about, for an hour, anyway! And don't we all need more recipes like that? To serve just add a vegetable side dish, along with fresh or canned fruit, along with a cookie if you have some. But they are not mandatory, because you have just given the family a memorable meal, and yes (once again) you added a bit of that special ingredient, love...

Often times, there was no recipe to follow. Just a comfortable process in the kitchen. 

I know I am beginning to sound like a well played record, but home cooking is nothing more than a process of using what is available in your pantry along with the usual cooking skills that you have become comfortable with. That process repeated time after time becomes a recipe. And those recipes become family favorites! And all those family favorite recipes are more than just food, they are nourishment, memories, and love all rolled into one! 

While this does have a list of ingredients, it really is more a process than an exact recipe, so if you want more onion, make it so! If you don't like thyme, by all means, yes, you can leave it out. But no matter what or how you customize it, it will always be homemade and delicious!


Some additional thoughts on this recipe:

For smaller families, please see a small batch version at the end of the recipe. 

While we always used Russet potatoes, this dish is also wonderful with Yukon Gold potatoes. 

And don't forget the pepper between each layer, that spicy taste surely belongs in a pan of scalloped potatoes!


Ingredients needed for this recipe:
  • pork chops
  • potatoes
  • onion
  • garlic salt
  • fresh ground pepper
  • thyme
  • flour
  • canned evaporated milk
  • Parmesan Cheese
  • oil
You will also need the following:
  • kitchen knife
  • cutting board
  • frying pan
  • deep 11X15 baking pan
  • measuring cup
Now you are ready to begin!



One Pan Pork Chops and Scalloped Potatoes - a freestyle recipe!

375-degree oven 
Updated: 12.11.2023

4 pork chops
oil for browning the chops
4-6 potatoes, depending upon the size 
1 large onion
garlic salt
1 t thyme leaves, divided 
1/4 c flour
black pepper
2 cans of evaporated milk
Parmesan cheese (yep the green shaker can stuff)

In a frying pan large enough to hold the pork chops, add 1 tablespoon of oil, sear, and cook the pork chops to a medium brown color, turn and repeat on the other side. 


Browning the pork chops adds delicious flavor to One Pan Pork Chops and Scalloped Potates.

Place the browned pork chops into the bottom of the 11X15 baking pan, sprinkle with some garlic salt, pepper, and 1/3 of the crushed thyme.

Peel the potatoes and the onion. Slice 3 of the potatoes, dice 1/2 of the onion.







Cover the chops with the diced onion, and the sliced potatoes.






Season with more garlic salt, pepper, and 1/3 of the crushed thyme. Sprinkle with the 1/4 c flour.



Slice and dice the remaining vegetables. And add to the pan. 


Ready to bake, One Pan Pork Chops and Scalloped Potatoes!

Season the top with more garlic salt, pepper, and the final 1/3 of the crushed thyme.



Pour the two cans of milk over the top, cover with foil, sealing well. Bake for 1 hour.

Remove the foil, and sprinkle generously with the Parmesan cheese over the top of the potatoes. 

Reduce the oven temperature to 350-degrees, return the pan to the oven, and continue baking for 30 minutes. 

Note: if desired you may place under the broiler to crisp and brown the top before serving. 

Remove from the oven, and let rest 10-15 minutes before serving.


For just the two of you, a small batch version of One Pan Pork Chops and Scalloped Potatoes!




Storage options for One Pan Pork Chops and Scalloped Potatoes. Store in the refrigerator for 2 to 4 days. You can freeze this dish, but expect some loss of quality upon thawing. Thaw in the refrigerator before reheating.

  16. Tried this dish it lacked flavor and the amount of cheese was not noted. It needed more onions and cheese (real) and salt.

    1. I wanted to address your comment as we all have the right to an opinion. First off, home cooking is ALWAYS a process, not enough onions for one family or cook may in fact be too many for another. Onions like cheese is used in the quantities desired for the flavor you enjoy. Home cooking is a process and not set in stone, use more or less of any ingredient listed. And of course if you consider other cheese more desirable (real?) for your dish, please use that as well. In review of my post, the last paragraph actually addresses your comment. But I wanted to reply as well, because I am not above someone not liking the recipes and processes offered here. Have a great day.

  17. Recipe tells you to peel 4-6 potatoes & 1 lg onion. Recipe instructs you to slice 3 of the potatoes & dice half of onion. Place this over the chops. Doesn’t tell you what to do with the remaining 2 or 3 potatoes or remaining onion… well I noticed half way through the process so we shall see. I don’t think this is a well planned meal

It seems that you may have missed the sentence "Slice and dice the remaining vegetables.", Not a problem.
