Maple French Toast Cups.

Get a handle on breakfast with these easy and delicious Maple French Toast Cups. Whole wheat bread has never tasted so good...plus no refined sugar for a healthy start to your day!


Life lately...

As I had mentioned in a previous post, our home is up for sale. We are finishing a few outside tasks along with new exterior paint to bring it all to fruition. And of course please whoever will be our new buyer. After the sale our goal is more travel once we find our new home somewhere along the way...we will be staying in Montana, but where is going to be a surprise. Even to us!

I have been busy getting our food stocks organized into "eat it now before the move", "pack it up for the RV trailer", or "pack it for the storage unit". This new journey before us is filled with a lot of new territories both in exploring our wonderful state and exploring our own true grit. The one thing that always remains constant is how we eat. 


This recipe couldn't be any easier.

The recipes I use are not any different while traveling than at home. My starting point for any recipe is fresh food, combined with creativity and a willingness to try something new. And depending upon where you are and the stores or food available, something new may be a change in an ingredient or a cooking process. These Maple French Toast Cups are a good example. 

Simple ingredients combined to make cooking and serving easy. I like easy just as much at home as I do while on the road traveling. Since I am way past sleeping on the ground in a tent, I do have the luxury of a compact yet complete kitchen in my little RV trailer and I take full advantage of it. And when these Maple French Toast Cups are in the oven, it is pretty clear breakfast is soon on the table...

Some thoughts on this recipe.

When cooking for a large group of folks, double the recipe and use a 12-cup muffin pan.

You may wrap and freeze the individual cups for those that like to eat on their own schedule. Perfect for those that eat at separate times...

If making ahead, loosen the cups and turn on their sides to prevent a soggy bottom, then wrap in waxed paper and store in the freezer. 

Because there is maple syrup in the batter, very little (if any!) is needed when you serve Maple French Toast Cups


Ingredients needed for this recipe:
  • 12 oz. evaporated milk
  • eggs
  • salt
  • bread
  • maple syrup
  • pan spray or butter
You will also need the following items:
  • deep 6 hole muffin pan 
  • medium-sized mixing bowl
  • whisk
  • punch can opener
  • kitchen spoon
  • measuring cups
  • cutting board
  • bread knife
Now we are ready to begin!



Maple French Toast Cups
by the seat of my pants!
350-degree oven

12 oz. can evaporated milk
1/4 c real maple syrup
pinch of salt
3 large eggs
6 slices of bread, we are using our homemade whole wheat bread.



Crack the eggs into the mixing bowl, and add the salt, maple syrup, and milk. Whisk until smooth and the eggs are well blended into the milk. 



Cut the sliced bread into small cubes, and stir into the egg-milk mixture. Let the bread sit and absorb the egg-milk mixture while you prepare the baking pan and preheat the oven. 



Spoon the bread mixture evenly into the 6 cups. Divide any egg-milk mixture in the bottom of the bowl evenly into the six cups.



Bake for 25 five minutes or until done in your oven. I like to test with a toothpick to make sure the middle is cooked. Let cool briefly before serving. 

Storage options for Maple French Toast Cups. Store covered in the refrigerator for up to three days. For longer storage times wrap each in wax paper and store in a freezer bag or freezer container. Let thaw in the refrigerator then reheat and serve.
