Slow-cooker Potluck Baked Beans

Slow-cooker Potluck Baked Beans, the one bean dish you will want to serve again and again! Don't be surprised if they are requested your family, and everyone inviting you to come and share a dinner at their house! Fortunately, the ingredients are available year-round...plus this is so easy to put together.


Why yes, this recipe does call for canned beans! 

While we almost always cook from scratch here at Scratch Made Food! & DIY Homemade Household, canned Pork and Beans is one commercial product I buy from time to time. As a matter of fact, years ago, you could find several cans of Pork and Beans in my pantry. I have collected a number of recipes through the years calling for this easy to use pantry staple. Including this one. It is not only easy to put together it is delicious too. Having these handy recipes is why I developed my own homemade pork and beans...Yep our Homemade (No)Pork and Beans works great in this recipe, just in case your store is out!

Bean dishes are a favorite for potlucks as well as everyday meals.

Slow-cooker Potluck Baked Beans is the side dish that is perfect to serve just about anytime. In the fall and winter as a side dish and from there it goes without saying at your next barbeque. Plus once this goes into the slow cooker, that is it! No stirring, or checking on them, nothing to worry about. Leaving you free to enjoy your day getting chores done or spent with family and friends. Leftovers, should you have any, are delicious cold the next day or can be frozen for another meal. 


Slow-cooker Potluck Baked Beans calls for simple ingredients and are most likely readily available in your well stocked pantry. The choice is yours, you can stock up when there is a sale at the market or make a batch of homemade Homemade (No)Pork and Beans. Either way, this is a dish you will enjoy each time you make it. I used my 9X13 Casserole Slow Cooker, and it worked perfectly to cook this dish. 

The casserole style slow cooker is works best for me, but is not mandatory...

I have to say this style of slow cooker (in my humble opinion...) is perfect for cooking beans and quite honestly, for serving from, as well. Due to the shallow design, the beans on the bottom do not overcook while waiting for the beans closer to the top to get done. Personally I have had that problem crop up in my kitchen when cooking beans in the slow cooker, how about you? But then again, cooking beans and my proficiency in doing so, has previously been discussed... 

Ingredients needed for this recipe:
  • pork and beans or Homemade (No)Pork and Beans, recipe link here.
  • onion
  • bacon
  • brown sugar
  • molasses
  • apple cider vinegar
  • apples
  • ballpark mustard
  • Worcestershire sauce
  • ketchup
 You will also need the following:
  • slow cooker
  • sauté pan
  • stirring spoon
  • kitchen knife
  • cutting board
  • measuring spoons
  • measuring cups
  • can opener
 Now we are ready to begin!



Slow-cooker Potluck Baked Beans

6-8 slices bacon, chopped
1 medium onion, diced
3 - 15 oz. cans pork and beans, see note below 
1/2 c brown sugar
1 T molasses
1 T apple cider vinegar
1-2 apples, chopped (do not peel)
1 T prepared mustard (yellow ballpark-style)
2 t Worcestershire sauce
1/2 c ketchup 
dash of hot sauce

Chop the bacon, then sauté in a skillet until beginning to brown, drain excess fat. While the bacon is cooking, dice the onion and set aside. 

After draining the excess bacon fat, add the diced onions and continue cooking until golden brown. 

Scrape the onions and bacon into the slow cooker. Chop the apples and place into the slow cooker.


How to make Potluck Baked Beans!

Add the rest of ingredients, stir well. Cover.

Cook on low for 4-8 hours, these beans are very adaptable to your own serving needs for a picnic or potluck.

Note: if you like "saucy" beans, do not drain the cans of pork and beans. If you do not like "saucy" beans, pour off the top sauce from two cans of pork and beans. To substitute Homemade (No)Pork and Beans, use 5 to 6 cups of cooked beans. 

Storage options for Slow-cooker Potluck Baked Beans. Store covered in the refrigerator for up to 5 days. You may freeze this dish, however you may experience a bit of texture change, but they will still taste delicious!
