Fruited Chicken Salad for Sandwiches.

A little bit crunchy, a little bit sweet, a little bit tangy! Fruited Chicken Salad for Sandwiches is just about perfect. 



It seems we don't buy much lunch meat in our household. 

It is quite costly, but more importantly it is full of salt and a few chemicals I can't even pronounce...so we tend to make our own sandwich spreads or cut thin slices from a roast or meatloaf from a previous dinner. But the think I like the best about making up our own sandwich spreads, is that I can make a large portion or a small one. To be honest my hubby loves tuna salad, so I usually make a large batch because he can enjoy it for several days in a row. Me on the other hand, once I have enjoyed a tuna sandwich or for two days in a row, I am done for a few days...

Make a much or as little as you need for your family.

For instance when making a recipe of Fruited Chicken Salad for Sandwiches it can be made with one breast piece or two. For the two of us, I usually make it with one breast half, but if we had guests coming over, I would double all ingredients and use two pieces of poached chicken. 

The same adaptability is available in our favorite tuna salad.  As well as this recipe for BBQ Chicken Salad for Sandwiches, simply add another piece of chicken when cooking everything up! Chicken salad is a whole different story for me, I could eat this one two or three days in a row...

While I usually poach the meat for Fruited Chicken Salad for Sandwiches, there is no doubt this would work very well with leftover breast meat from a roasted turkey or chicken. And with the meat already cooked, this recipe comes together very quick! Dates and pickled onions seem odd together, but trust me, this is one tasty sandwich spread! While I like an apple with my sandwich, my hubby opts for chips...

I well remembered a lovely chicken salad sandwich I used to enjoy at The Bon Marche Department Store in Yakima WA many (many!) years ago. It was delicious in many of the same ways this sandwich is. Lightly crunchy, lightly sweeten, and lightly savory. But their sandwich was served on lightly toasted walnut bread. I have never forgotten the enjoyment of such a simple yet enjoyable sandwich all these years later. I think you too, will enjoy this Fruited Chicken Salad for Sandwiches.


Ingredients needed for this recipe:
You will also need the following:
  • cutting board
  • kitchen knife
  • measuring spoons
  • measuring cups
  • silicone spatula
  • medium size mixing bowl
  • storage container with lid
Now we are ready to begin!



Fruited Chicken Salad for Sandwiches.
by the seat of my pants!

1 large chicken breast half, poached and chilled
1 rib celery
2 T Quick Pickled Onions, plus 2 t of the brine
1/4 c whole dates
1/3 to 1/2 c mayonnaise

Wash and dry the celery. Remove the pits from the dates. Remove any exterior fat and or skin from the poached chicken breast.

Mince the celery and the dates. Dice the chicken meat. 



Add all of the diced ingredients to the mixing bowl, top with the mayonnaise, the pickled onions, along with the brine. 

Fold the ingredients together. Store in a storage container with a tight fitting lid in the refrigerator. 



Storage options for Fruited Chicken Salad for Sandwiches. Store covered in the refrigerator as suggested for up to four days. Do not freeze this recipe.

  1. I make a similar fruited chicken salad but tend to use raisins or craisins and throw in just a few diced apples as well... though I have never heard of pickled onions!

  4. I love chicken salad. I usually make mine with miracle whip and dried cranberries. I’m not a fan of celery but I’ll give your version a try.

    1. My husband is a Miracle Whip fan, and I usually put some on the bread for his sandwich, but me not so much! We were a mayo family since childhood and I have loved mayo since then! This recipe has a delicate flavor with the celery, dates and pickled onions that comes together deliciously. Thanks for stopping by, I sure appreciate it!

    1. Well Donna, you are not the only one! I would have never thought to try them either, using dried cranberries instead. We are traveling this winter/spring while our home is being repaired from serious winter weather damage, and I have a reduced pantry inventory of food. And for this recipe, I found that using a different ingredient was delicious! It is only a touch of sweet from the dates, and we really enjoyed it! I think I have come to enjoy a reduced food pantry, it brings out more creative ideas! Thanks so much for stopping by, I really appreciate the visits!

  7. I love Chicken salad. I'm not a fan of celery so I leave it out of my version. I use chicken, mayo, and dried cranberries.

    1. I agree dried cranberries are wonderful in chicken salad. When I am out of them, I use a smear of cranberry mustard on the bread to take their place...thanks for stopping by!
