How we make BBQ Chicken Salad for sandwiches. Easy, delicious, and no additional pans to wash! It really is a bonus meal to enjoy. Not the usual chicken salad, you will love this one, with or without chips on the side!
Funny how cooking one thing, will lead to a new recipe!
This recipe for BBQ Chicken Salad for Sandwiches came about because of our enjoyment of having a Baked Potato Bar, for dinner. A Baked Potato Bar is one super easy meals to make and enjoy. A Baked Potato Bar is pretty much like having Salad Bar for dinner. Only with baked potatoes!
While the potatoes are baking we cook up some toppings, whatever we desire and find in the pantry. Such as pan-roasted broccoli or zucchini, our favorite taco meat, sautéed ham or sausage, Pulled BBQ Chicken, buttered corn, cooked peas, and grated cheese.
For the Pulled BBQ Chicken, I will load the slow cooker with 4 to 6 boneless, skinless chicken thighs, and cover them with our favorite BBQ sauce, simply slow cook until meltingly tender. When pulled with a couple of forks it is perfect for a Baked Potato Bar dinner, that night.
But you might as well load up that appliance and multi task!
And it is also the perfect time to make a bonus meal. Just tuck a couple of skinless boneless breast pieces into each end to cook in all that saucy goodness right along with the thighs. When working with the thighs getting them pulled and ready for that Baked Potato Bar, simply set the cooked breast pieces aside for sandwich making!
One is usually sliced thinly for sandwiches, but the other is used for this delicious BBQ Chicken Salad...you can of course use both pieces of cooked breast meat to make BBQ Chicken Salad, just remember to double everything else also!
This is a delicious sandwich! BBQ Chicken Salad is crunchy, not too sweet, and delicious between a couple of slices of bread, or open-face style. Be sure to add some bread and butter style pickle slices and a few black olives, on the side! I love bonus cooking/multi tasking! And so will you.
Ingredients needed for this recipe:
- cooked chicken breast meat
- mayonnaise
- smoked paprika
- bread and butter pickle brine
- celery
- quick pickled onions
- salt and pepper
You will also need the following:
- cutting board
- kitchen knife
- measuring spoons
- silicone spatula
- serving dish
- storage container with a tight-fitting lid
Now you are ready to begin!
BBQ Chicken Salad for Sandwiches
by the seat of my pants
1 cooked (in BBQ sauce!) chicken breast half
2 ribs celery
1/4 c Quick Pickled Onion, drained
3 T mayonnaise
2 - 3 t "Bread and Butter" style sweet pickle brine
1/4 t smoked paprika
salt and freshly ground pepper if desired
Dice the celery and the chicken meat into 1/4 inch pieces.
Place the celery, chicken, and the Quick Pickled Onions into a medium-sized bowl.
Add the mayonnaise, smoked paprika, along with sweet pickle brine. Season with salt and pepper as desired.
Transfer to a serving bowl or storage container with a tight-fitting lid.
To serve, simply make yourself a sandwich...
Storage options for BBQ Chicken Salad for Sandwiches. Store tightly covered in the refrigerator for 3 - 5 days. I do not recommend that you freeze this recipe.
