Julia's Caesar Salad Dressing

Let's make Julia's Caesar, so delicious, quick to stir together, and it contains no raw egg! This creamy, lemon-y, Parmesan Cheese-y dressing will be your new favorite. 


The salad was delicious, but the recipe today is for the dressing...

Being a veggie rebel, you might think that the quickly composed salad that you see is the recipe I am sharing today. But no. Today's recipe is for the salad dressing drizzled over that platter of greens. 

Julia's Caesar is a simple to make, delicious Caesar style dressing you will enjoy again and again! Whether you have a head of Romaine lettuce in your refrigerator or not...and I can assure you, it is delicious over everything "vegetable" you drizzle it over!

Don't get me wrong, I love a good Caesar Salad. 

But this creamy concoction is too good to save for only a head of Romaine! I have served it drizzled over simple vegetables I have on had for a quickly prepared composed salad, over this beautiful platter of mixed greens, as well as the traditional Caesar Salad with freshly made garlic-y crouton. And each time it is a hit with the taste buds and the family. 


Often when we enjoy a salad with our meals it is not a traditional salad in the standard recipe sort of way. For example, what you see over this platter of salad greens is a Caesar dressing, yet there are no croutons scattered over the greens, and it is more than just romaine lettuce. And I have come to not only enjoy the fresh taste but crave a salad with flavor and variety, like Romaine, Tuscan Kale, and Baby Spinach. 

And Julia's Caesar is also a perfect dip for steamed and chilled artichokes...


Some additional thoughts on this recipe:

While olive oil is so good for us, I for one do not always enjoy the stronger flavor in a salad dressing. Often I will substitute avocado oil. Use what you prefer. 

Due to the salty anchovy paste and Parmesan Cheese, I do not add any salt. 

Don't forget the fresh ground pepper and feel free to be generous with it!


Ingredients needed for this recipe:
  • garlic
  • anchovy fillets or paste
  • lemon juice
  • red wine vinegar
  • pepper
  • mayonnaise
  • olive oil
  • Parmesan Cheese
  • salt
You will also need the following:
  • whisk
  • storage/shaker jar
  • liquid measuring cups 
  • citrus juicer
  • measuring spoons
  • kitchen knife
  • cutting board
Now we are ready to begin!




Julia's Caesar
adapted from: Dinner, A Love Story

1 large clove garlic, pressed or minced very very finely
8 anchovy fillets, mashed to a paste 
or anchovy paste - a generous Tablespoon
juice of 1/2 lemon about 2 T
2 T red wine vinegar
several grinds of pepper
salt, if desired
1/4 c mayonnaise

1/2 c olive oil
1/2 c Parmesan Cheese,  finely grated (from the green can, is perfect for this)
salt if desired

Peel and finely mince the garlic. Juice the lemon to get 2 tablespoons of lemon juice. set aside. 

In a medium sized mixing bowl, combine the ingredients as listed - garlic through mayonnaise. Whisking until smooth. Whisk in the oil and Parmesan Cheese. Taste, add salt if desired.

Refrigerate until needed, drizzle over salad greens or a Composed Salad of choice.

Storage options for Julia's Caesar Salad Dressing. Store covered in the refrigerator for up to five days. Do not freeze this recipe.
