I have been baking with whole wheat flour for a while now, and have made some pretty tasty food if I do say so myself. I am especially fond of whole-grain, fruit-sweetened quick bread. Which I hope to develop more recipes for. Yet, each time I take on a new recipe, I wonder why I waited so long to make it!
But I do know...I have always been timid when it comes to a major change in my kitchen routine. I think you might have already picked up on that part of me, because I have no reason to be anything but honest with not only my cooking but my habits as well. Why? Well by sharing what is really going on, you will come to know, trust. Trust in the recipes and in me.
And making the change to whole wheat baking was not easy, and it was not overnight! I have touched on our journey to whole wheat baking here, and I will say it was not without trial and error(s)! But I am totally glad I got going on it, and we eat better for it.
Yikes, the truth is, failures happen to everyone...
It took me a few years to realize my tendency towards being timid did not guarantee that I wouldn't have kitchen failures, no, not at all. And to this day I still have my share. I think you know what I am referring to, food that is edible, but not worth sharing, with people or on a blog post.
But every cook and baker has them, and the truth is, you might also. But I hope that does not keep you from learning more about the foods you want to cook and bake with. Because now the only thing I wonder about is why I waited so long! So let's make Sugar and Spice Snickerdoodle Bars! Trust me, this recipe will not fail and you won't be sorry...they just might be your new favorite bar cookie.
Some additional thoughts on this recipe:
Room temperature butter can be a problem on busy days, so this recipe from Fannie Farmer takes that in account, and instructs you to cut the (cold, from the fridge) butter into slices. Because they warm up faster!
Delicious just as they are, but if you would like something over the top, make a simple glaze with powdered sugar and coffee, it marries well with the spice in these bar cookies.
Ingredients
needed for this recipe:
- butter
- sugar
- eggs
- vanilla
- salt
- whole wheat flour
- baking soda
- nutmeg
- cinnamon
You
will also need the following:
- handheld OR stand mixer
- measuring cups and spoons
- whisk
- 7X11 baking pan
- silicone spatula
- mixing bowl
Now
we are ready to begin!
Sugar and Spice Snickerdoodle Bars

375-degree ovenUPDATED: 10.26.2023
1/2 c butter, cut into 6-8 slices
3/4 c sugar
2 eggs
1 t vanilla
2 c whole wheat flour, we used pastry grind Spelt flour
1/2 t salt
1/2 t soda
1/4 t fresh ground nutmeg
3 T sugar
1 1/2 t cinnamon
Cream butter and sugar until combined well. Add eggs and beat until fluffy. Add vanilla, whole wheat flour, salt, soda, and nutmeg beating until well mixed.
Spread dough into a prepared 7X11 inch baking pan.
Combine the remaining sugar and cinnamon, sprinkle evenly over the top.
Bake 25 minutes or until done in your oven. Let cool, cut into 24-32 squares or the size and shape that works best for your family.
Storage options for Sugar and Spice Snickerdoodle Bars. Store tightly covered at room temperature for up to five days. You may freeze this recipe.
