Peaches and Cream Chia Pudding

Peaches and Cream Chia Pudding, simple, delicious and made from basic ingredients. Need a quick and healthy dessert? Take a look right here...


This is creamy, honey sweetened and fruity! 

While many make and enjoy chia pudding for breakfast. In our house we make this for dessert, and one I can enjoy any time I want because it is stirred together in about 10 minutes from basic pantry and refrigerator ingredients. It is naturally sweetened with honey, but you could easily substitute real maple syrup. And honestly you could make this tasty pudding with any canned fruit, to change things up, I think pears might also be nice...

Many years ago I would not even consider ending dinner without a serving of dessert! 

But I began to notice that I was enjoying dessert less and less, and realized it had become more of a habit that anything else. Then for about 10 years I only ate dessert for special occasions. Not because I was enforcing any eating rules, it simply worked out that way. But then something interesting happened. Once I began eating less refined sugar, I was able to see that in all reality it did not agree with me as much as I thought it did. Even when I was eating desserts on a regular basis. And that prompted me to learn about and use honey and maple syrup in our recipes.
 


And wouldn't you know it, now it appears that dessert is on my mind once again! 

I have been having a strong desire for a little something after dinner. So it was time to put my thinking cap on and start creating a few, new naturally sweetened desserts to enjoy. And I have to tell you when I was developing Peaches and Cream Chia Pudding, I ate the whole recipe in two days (shhh please don't tell on me!) all in the name of recipe development mind you! But also because it really is quite good! 

This recipe does not call for the thick high fat coconut milk found in a can. 

You favorite milk is fine, I used coconut milk. However feel free to use regular milk or even your favorite nut milk. This is not a dairy free dessert, in addition to the milk used, it also calls for sour cream, however Greek yogurt would be a fine substitute. And in keeping with my tradition of serving a pudding dessert I plan on having some, with a touch of whipped cream on top. How about you, are you a chia pudding fan? 


Some additional thoughts on this recipe:

The easiest way to warm the honey is in the microwave, about 30 seconds is all you need. 

The 10 minute set time is needed so the chia seeds won't sink to the bottom and form a crust

All chia puddings need a standing time, make this in the morning for dinner that day or let sit overnight. 

Keep in mind the fiber content in chia seeds, we each have different fiber needs and tolerances.

Next time, consider canned apricots...or toss a handful of fresh blueberries or raspberries over the top!


Ingredients needed for this recipe:
  • canned fruit
  • sour cream or Greek yogurt
  • milk of choice
  • chia seeds
  • honey 
  • vanilla
You will also need the following:
  • mixing bowl
  • whisk
  • measuring spoons
  • measuring cups
  • storage container with a lid
Now we are ready to begin!



Peaches and Cream Chia Pudding
by the seat of my pants!

1 16oz can organic juice packed peaches, drain and reserve the juice
or
1 pint jar of home canned peaches
1/2 c reserved peach juice/syrup
1 c milk, I used coconut milk 
1/2 c sour cream or Greek yogurt
1/2 c chia seeds
1/3 c honey
1 t vanilla

Open and drain the peaches, saving the juice. Set the drained peaches aside until needed. Measure out 1/2 c of the juice and set aside. 




Heat the honey gently, then pour into a medium mixing bowl and add the reserved juice, sour cream, chia seeds and the vanilla. Mix well using a whisk. 



Let sit for 10 minutes, whisk again. Chop the reserved peaches and add to the pudding mixture. Pour into a covered container and store until thickened. 


Peaches and Cream Chia Pudding, with fresh blueberries!

Serve with whipped cream of desired. 

Storage options for Peaches and Cream Chia Pudding. Store covered in the refrigerator for up to four days. I do not recommend freezing this recipe.

  1. This recipe looks delicious and quite healthy. I like to use honey as a sweetener as well. By using canned peaches this can be whipped up at any time of the year, I like that idea.
