Stir Fried Red Cabbage with Ginger and Chives

Fresh, different, and delicious! If you are looking for a new recipe to try that incorporates those qualities Stir-Fried Red Cabbage with Ginger and Chives is calling out to you! This beautifully bright, crisp-tender vegetable side dish is perfect with just about any main dish you serve. 


Cabbage is often overlooked as a side dish, but this recipe will change all that!

With more and, more vegetables coming off local gardens and offered at your local Farmer's Markets, make sure a red cabbage goes into your market basket. Because you will want to offer your family in this delicious Stir-Fried Red Cabbage with Ginger and Chives. Depending upon where you live, it still might be hot outside. It certainly is here in East Texas! Which means a stir-fried vegetable side dish is just the ticket to avoid oven roasting or a long simmer on the stovetop. 

Easily serve this from a platter and enjoy how beautiful it is! 

Beautiful yes, but this Stir-Fried Red Cabbage with Ginger and Chives is also delicious! I was pleasantly surprised at the great flavor combination of cabbage and ginger together. Most red cabbage recipes have you cooking the stuff for hours or shredding it for a Cole Slaw or salad. A real taste change, this recipe is fresh, crunchy, and offers an added bonus, the leftovers are delicious when eaten cold, and served as a salad the next day. 


Cabbage is so versatile it's a shame it is one of the "lonely" vegetables. 

Cabbage (unfortunately) is one of the lonely vegetables, the one we don't think of first and foremost when shopping at our favorite marketplace or farmer's market. It is kept company by the likes of parsnips, turnips, and rutabagas. But we are big fans of root vegetables not only are they good for you, there are times when those vegetables are the only ones available. So it seems like a good idea to learn to cook them into delicious side dishes that you will enjoy. Why not start with Stir-Fried Red Cabbage with Ginger and Chives?

Maybe that is why I am always on the lookout for another interesting recipe calling for cabbage. I do tend to promote the lonely foods, the ones so good for us, like cabbage, prunes (don't laugh!), and rutabagas.
  

What can I serve this with?

Stir-Fried Red Cabbage with Ginger and Chives goes great with grilled meat of all kinds. Or fish for an easy and satisfying meal. And because cabbage is such a good keeper, this would be perfect to serve again when the weather begins to cool down. How about alongside fish tacos or as a surprising replacement for traditional coleslaw, the next time, you have fish and chips. The sky's the limit!

Ingredients needed for this recipe:

  • red cabbage
  • fresh ginger
  • fresh chives
  • green onions
  • oil
  • Sweet Mirin Wine or water
  • sweet soy sauce

You will also need the following:

  • kitchen knife
  • cutting board
  • food planer or small holed grater
  • measuring spoons
  • liquid measuring cup
  • large skillet/stir-fry pan
  • serving platter

Now we are ready to begin!




Stir-Fried Red Cabbage with Ginger and Chives

1 small head of red cabbage, cored and sliced thinly or shredded (about 1 pound)
1 1 inch piece of ginger, finely grated
1/4 c 2-inch pieces of chive "spikes" 
or  
4 green onions cut into 1-inch pieces
2 - 21/2 T oil, we use avocado oil
up to 1/4 c water or sweet Mirin wine, if needed
sweet soy sauce, to finish


Shred the cabbage, and grate the ginger, setting both aside until needed. 

Clean and cut the green onions, or prepare the chives depending on which you are using.


Over medium heat, sauté the ginger until fragrant, take care not to burn, ginger has a higher sugar content than one might think.

Add the shredded cabbage, continue to stir fry for 6-7 minutes. Add the green onion pieces, stir fry briefly to soften. 

If the mixture seems too dry, add water or Mirin to moisten. 

Stir in chives/green onions and continue to stir fry for 1 additional minute.

Place on a large serving platter, drizzle with the sweet soy sauce to finish the dish if desired. Serve. 

Storage options for Stir Fried Red Cabbage with Ginger and Chives. Store leftovers in the refrigerator for up to three days. If serving as a salad the next day, bring to room temperature before serving.
