Chocolate Chip Cookie Pie!

In about five minutes you can have this Chocolate Chip Cookie Pie in the oven, it is that easy. Serve when still a tiny bit warm, adding a touch of whipped cream or a tiny scoop of ice cream and you have just made every chocolate chip cookie lover very, very happy!



This Chocolate Chip Cookie Pie was baked up the first time for a Father's Day celebration dinner. 

And it was one of the brightest spots of the day. At the time, while still in Montana we had a very cold and wet spring. I think we were all ready for a heart warming fun celebration. Father's Day is usually warm and sunny. Perfect outdoor BBQ weather. But not that year...we had gray skies, and it rained all day. Then right before dinner a bit of a break in the weather to grill our burgers and dogs on the gas grill. 

Now in East Texas, We have all been a bit busy, again!

Selling the Wyoming house. Packing everything up. Moving trucks and trekking to Texas. Unpacking, and moving in. Getting settled. Repairing outbuildings, learning about the goods and services available close by. Getting a garden started. And adjusting to the new climate. 

But no matter how busy one is during the week, there is always a family dinner on the weekend and that calls for a dessert to share, like this one for Chocolate Chop Cookie Pie! So why exactly would we save this just for Father's Day? 

We don't! 

It is the one dessert to bake anytime you want to say "thank you" for a job well done. Or just because you love Chocolate Chip Cookies and this easy to serve pie with ice cream is simply calling out to you! 

Is it blog-worthy?

When I served up slices of this pie, I asked all around the table, "is this blog-worthy?" Everyone shook their heads yes! And then without any words being spoken proceeded to enjoy the rest of the piece of Chocolate Chop Cookie Pie before them and that was all I needed to know. I think my husband in particular added a touch more whipped cream as he continued to enjoy his portion!



Ingredients needed for this recipe:
  • Whole Wheat Self-Rising Flour
  • butter
  • vanilla
  • eggs
  • brown sugar
  • chocolate chips
  • pan spray or butter
You will also need the following:
  • measuring cups
  • measuring spoons
  • large glass measuring cup
  • medium-sized mixing bowl
  • whisk
  • silicone spatula
  • 9-inch pie pan
Now we are ready to begin!



Chocolate Chip Cookie Pie

1 2/3 c Whole Wheat Self-Rising Flour, our recipe found here
2 eggs
1 1/3 c brown sugar
1 stick (1/2 c) butter
1 t vanilla
2 c chocolate chips

Melt the butter in the large glass measuring cup in the microwave or on the stove in a small saucepan. Let aside to cool. 

In a medium-sized mixing bowl combine the Whole Wheat Self-Rising Flour and the brown sugar. Whisk them together to mix together, making sure to work out any brown sugar lumps.

 

Make a "well" in the center of the Whole Wheat Self-Rising Flour and brown sugar mixture, and add the cooled melted butter. 



Break the eggs into the same measuring cup or saucepan used to melt the butter, and add the vanilla. Beat together. Add to the butter and mix until no dry spots or wet spots remain in the dough. 



Stir in the chocolate chips. Prepare the pie pan with pan spray or butter it well. Add the cookie dough spreading to the edges. 



Bake 35-45 minutes or until done in your oven. The center may appear undercooked but will continue to cook upon standing. Take care not to overbake! Let cool before cutting and serving. 

Storage options for Chocolate Chip Cookie Pie! Store covered at room temperature for up to three days. Refrigerate if stored longer, bring to room temperature before eating.

  2. I bet they loved it! My husband requested a chocolate chip cookie pie as well... but not until that very afternoon after we had already given up on getting suggestions from him and he had to make do with a chocolate swirl cheesecake.
