We have enjoy traveling as volunteers for the National Parks System. It is a great way to see the country, be of service to others and have fun together. We also learned a bit about cooking and being prepared on the road. Come and take a look at some of our most used recipes and ideas...
It goes without saying that the more equipment you take with you, the easier it will be to get a meal on the table quickly with minimal clean-up. This is especially true for park volunteers because your time is scheduled for the needs of the park. But most 5thwheel's have a small kitchen and you probably will not have all the equipment you are used to at home. We do live in a small 5thwheel during our time at camp, but there is nothing in any of these recipes that will require special equipment other than a can opener!
We did cook outside from time to time, but most food was cooked in the RV kitchen.
Some are masters at cooking over an open fire, others like myself, not so much. But it is easy to get the hang of it, (however in full disclosure, this was my husband's job!) and the best tip is to use the edge of the fire for lower heat to prevent scorching/burning the food. Plus the edge of the fire is where a covered heavy-duty pan/skillet can be placed to "bake" food in place of an oven. But I would not worry about making perfect meals, camping is all about time together and enjoying the beautiful scenery. And food always tastes best cooked out of doors! Come and take a look, you just might find a new camp favorite!
Beverages are important, they are the perfect solution to getting enough water.
Beverages: Having a quiet moment in the morning over coffee or a brief rest after a day of hiking or other activities is one of the best shared times at camp. For hiking and long walks, you will want to take plenty to drink for pleasure and rehydration. The warmer the weather the more we need to drink, here are some suggestions to offer a bit of variety throughout the day!
Chocolate Sugar. This easy-to-make pantry mix turns coffee into mochas and milk into cocoa! Don't start your mornings without it! It doesn't matter if we are at home, or camping, for my husband it is not "morning coffee" without it being a Mocha!
Blueberry and Coconut Water Switchel. For the coconut water fans out there, perfect on a hot day after hiking. Cardboard cartons of coconut water are so easy to pack, and this Switchel is so easy to make. Plus it is so much better for you than soda and tastier than just plain water...
Switchel. This is the one that was called "Haymaker's Punch" because it will keep you going in the hot sun. Which means it is perfect for camp. The ingredients as well as the preparation are camp approved.
Easy Chia Seed Water. It doesn't get easier than throwing some chia seeds into whatever you are drinking! But just in case, there are also several ideas for different flavors to enjoy.
Breakfast for us, started the day whether we were on duty or off the roster.
Breakfast: A few premade foods from your kitchen packed up for camping are always a blessing. Granola is perfect to make ahead and is always enjoyed at camp. Plus everyone can help themselves. And I have listed many to choose from. Add some fresh fruit and you are good until lunch. For those that want a hot breakfast cereal, I offer the easiest oatmeal ever. For the pancake or French toast fans, I have you covered as well!
Broiled Plums with Sour Cream and Honey. This delicious recipe is perfect for the farmer's market fruits you will find all summer long!
Easy Oven Baked Whole Wheat Pancakes. For our little group oven baking just makes sense. But a bowl of this pancake batter lets everyone cook their own leaving the cook to handle eggs and bacon...For many pancakes are a must-have at camp! Plus our pancake recipe is so easy to make...
Honey Walnut and Hemp Heart Granola, is crunchy and full of dried blueberries and toasted walnuts. This granola is naturally sweetened with honey.
Cashew Butter Granola, for the cashew lovers out there! Another naturally sweetened granola.
Maple Pecan Granola, for those that love real maple syrup! Real maple syrup is the sweetener for this granola.
Honey and Almond Granola, this recipe for granola started it all! Clean-tasting honey-sweetened granola with almonds and coconut. Yep, only honey in this granola.
Brown Sugar and Cinnamon Granola. What can I say, I was a kid in love with Pop-tarts when they were invented oh those many years ago! This granola does include sugar...
Nuts and Honey Granola, one of the latest flavors of granola coming out of our kitchen!
Let's Go Coconuts! Granola. More for adults with a rich caramel flavor from the coconut sugar with a bittersweet chocolate finish...
It Pretty Much Cooks Itself Irish Oatmeal. For those that want cooked oatmeal for breakfast, this method is perfect for camp. We also use it at home.
Maple French Toast Cups. The easy way to make French toast is in muffin cups! If you are cooking for a large group, just double the ingredients and use 12 cups.
While lunch was always enjoyed, for me, it was leftovers when ever possible.
Lunch: Lunch at camp is a time to be really frugal in the kitchen! This is where we utilize leftovers to the max. Personally, when I make a sandwich for lunch it usually means there are no leftovers to enjoy! This translates to, you are not going to find recipes in this category...but feel free to go wild and crazy for your own particular hunger needs! Since my hubby is a lover of roasted hot dogs, that is often his lunch of choice!
Some of these are café quality, and have a lot of creativity to offer the evening meal!
Main Dishes: This is usually NOT where folks run short of ideas! Often times camp is where everyone enjoys cooking, especially the menfolk! My favorite main dish while camping is whatever my husband cooked over the fire...but I do offer these other suggestions as well.
Pork Chops with Scallions. A bit of prep in the morning and you have a delicious yet easy-to-cook meal later in the day. Plus from the grill means that you have a helper, helping.
Chicken or Pork with Vegetables Skillet Meal. This easy meal all comes together in one pan. Plus you can skip baking in an oven, simply place the covered skillet on the far edge of the grill where the heat is lower and continue with the recipe.
Mustard Oregano Chicken or Chops. Having these marinated and ready to go is a sure way to get dinner cooked fast. The grill up nicely, and can be finished at the side of the fire.
One Pot Pantry Pasta with Ground Beef. For the pasta lovers out there! This is made with only the stove needed...
Salads are the perfect way to get more vegetables on everyone's plate!
Salads: It is easy to forget about salads when camping, however, salads make it easy to round out a meal and fill in the gaps from hungry to satisfied. We usually plan meals based on the fresh foods that will be used first. Some of these do call for fresh produce.
Crunchy Tangy Jicama Waldorf Salad. The ingredients for this salad need no refrigeration.
French Lentil Salad. This only sounds fancy, but in reality, it is perfect to make at camp because it is served at room temperature...
Black-eyed Pea and Tomato Salad. Pack a can or two of beans and you can whip up this easy salad in a jiffy. Feel free to use one or two diced tomatoes in place of the cherry or grape tomatoes.
Simple 3 Ingredient Beet Salad. This is so easy to whip up and is just as delicious using canned whole beets, diced.
A Composed Salad is perfect at camp! You will be able to enjoy any food find along the way at a farm stand or farmer's market in small towns you may pass through on your way to camp. There are no rules, except this one, use what you love and enjoy!
And a couple of vinaigrettes to enjoy.
Everyday Vinaigrette. The easiest vinaigrette ever! Perfect to keep around to drizzle on greens (foraged or purchased) or leftover veggies for an impromptu salad.
Bistro Style Mustard and Shallot Vinaigrette. This goes great on just about anything, perfect for a Composed Salad or simple tossed fresh greens.
Don't leave the condiments at home...
Condiments to consider: Having a couple of condiments in your cooler or RV fridge will make it easy to get tasty meals on the table.
Quick Pickled Onions. A jar of these onions is always in our fridge, and they are just as looked forward to at camp.
Apple Raisin Chutney. Chop and stir a batch of this up before heading to camp, you will not be sorry!
Tomato Serendipity. You simply can't go wrong with this one! Shake on a zippy tomato cheese flavor and eat heartily.

ReplyDeleteYour ideas are good. Some more ambitious than I would go, simply because it’s so hard to keep a lot of supplies on hand in our small fridge. We do what we can, and end up eating kind of boring foods, and not the healthiest, unfortunately.
